Quinoa Burgers with Tzatziki

INGREDIENTS
  • ½ Cup Primeal Quico or Quinoa
  • 1 Medium Carrot
  • ¼ Cup Dried Breadcrumbs
  • 1 Large Egg (lightly beaten)
  • 1 Tbsp. Ground Cumin
  • Maldon Sea Salt
  • Carmencita Black Pepper
Tzatziki:
  • ½ Cucumber
  • 1 ½ Cup Yogurt
  • 2 Large Garlic Cloves (crushed)
  • 2 Tbsp. Iliada Extra Virgin Olive Oil
  • Maldon Sea Salt
  • Fresh Dill or Mint
METHOD
  1. Cook the quinoa according to packet instructions. 
  2. In a food processor, pulse carrots; add quinoa, breadcrumbs, egg, cumin, salt & pepper; pulse until thick.
  3. Form mixture into 4 inch thick patties (dip hands in water to avoid sticking).
  4. In a non-stick pan over medium heat, cook burgers until browned & cooked through; 7 minutes per side.
  5. Serve in bun, with tzatziki sauce.
Tzatziki:
  1. Mix grated cucumber, garlic, salt, mint and yogurt together until evenly incorporated. 
  2. Drizzle with olive oil.
