Shrimp Noodle Stir Fry

  • Poseidon Medium Peeled  Tail-On Shrimp
  • 1 bag Chinese Wheat Noodles
  • 2 Tbsp. Olive Oil
  • 1/3 Cup chopped onion
  • 1 Clove garlic
  • 3/4 Cup broccoli
  • 1/2 Cup chopped red bell pepper
  • 1/2 Cup canned sliced  Bamboo Shoots
  • 3 Tbsp. Oyster Sauce
  • 1 Tbsp. Chili Flakes
  • 1/2 Cup baby corn 
  1. Bring a large pot of salted water to boil over high heat; add the noodles; cook until they begin to float approximately 1-2 minutes.
  2. In a large pan over medium-high heat, add oil; once hot add onions & garlic and cook until lightly brown. Add the bell pepper; cook until tender; stir in shrimp, baby corn, bamboo shoots, oyster sauce, and chilli flakes. Cook until shrimp & vegetables are heated through; approximately 3 minutes.
  3. Serve shrimp & vegetables mixed with noodles.
  4. Garnish with fresh scallions.
