Asparagus, Cherry Tomatoes & Pine Nuts Salad

  • 500g Asparagus, trimmed & halved
  • 5 cups cherry tomatoes, halved
  • Handful of fresh basil leaves
  • 1/2 cup pinenuts, toasted
  • 1 avocado, cut in cubes
  • Dressing:
  • 1/4 cup olive oil
  • 2 tsp dijon mustard
  • Maldon sea salt
  • Fresh cracked pepper
  1. Cook asparagus in boiling water for 2 min. Drain & rinse with cold water.
  2. In a large salad bowl, toss all your ingredients together & add the asparagus.
  3. In jar, shake all your ingredients together. Pour over the salad & toss to coat evenly.
