Our Famous Rosemary & Garlic Potatoes

  • Potatoes (as many as you like)
  • Maldon Sea Salt
  • Lots of garlic cloves
  • Handful of fresh rosemary leaves
  • Extra virgin olive oil
  • Handful of pumpkin seeds
  • Method
  1. Cut the potatoes into wedges & chuck into a pot of boiling salted water for around 5 min.
  2. Strain well and put in a baking tray that is well oiled with extra virgin olive oil. Drizzle potatoes with more olive oil & sprinkle with sea salt & rosemary. Add the garlic cloves & toss well until potatoes are coated evenly.
  3. Place in a hot oven on high heat for around 45 min., checking regularly and turning occasionally. The potatoes should start turning golden when they are ready. You can turn on the broiler for 5 minutes at the end if you like a golden brown finish. Garnish with some pumpkin seeds & fresh rosemary.
